Meal Planning Monday


Getting this in late, but I'm gettin it in! Today was busy! I spent several hours working on a 'top-secret' father's day gift that I'm sooo excited about. 
And theeenn I made some homemade salsa and homemade guacamole to go with tonight's dinner...another thing I'm super stoked for. 
(Hubby was off today so he and Liam when on a little boy's afternoon out and gave me lots of free time. IT. WAS. AWESOME!)

Anyway.
Dinner this week!



Ok so one of my bestest blogger buddies Tessa (http://www.bedtimechronicles.com) introduced me to this AMAZING casserole. Made it once...didn't have nearly enough leftovers. The hubby raved about it, and I loved it just as much!

Here is the salsa recipe I used for tonight. (I've already tasted it. YUMMY!)
As far as guacamole, I've been making it so long that I just do it to taste. Usually just throw in some sea salt, garlic, and lime juice until it tastes good!

This looks way too delicious not to try!

Marinated Pork Tenderloin
Pork tenderloin is SO easy. (And lean, too!) For this one, all I do is marinate it with a seasoning packet (I get the McCormick grill mates, super yummy!) and if we feel like firing up the grill, we'll grill it. If not, I use the good ole broiler!

I could LIVE on Chick-Fil-A everything, but to get to one I'd have to Kayak the Pacific. These look pretty legit like a copycat Chick-Fil-A version...we shall see!

I guess I didn't think we had enough pasta on the menu this week. 
To make my pasta dishes more 'healthy', I always get wheat pasta if it's available.

Several People asked me where I got these crochet-type swim cover up pants after I posted a picture on IG--I got mine from TJMaxx! Total score, because I've been looking online and they're really pricey other places! (mine were 16$)
I found these really cute ones from Nordstrom, but the price is REDIC!! I mean, honestly Nordy, 70 bucks for pants with holes? Do I LOOK retarded?
I'd def recommend looking at TJ's/Ross/Target if you want something similar.

7 Month Favorites for Baby


I hate buying tons of baby toys that are pointless (And those things get expensive!!) so I googled best toys for development. I found this chart that goes by age! A lot of fantastic ideas on there. Anyway, stacking rings and wooden blocks are both on there, so I got a cheap set of both. (Here are the blocks we got. They come with a canvas bag for storage--handy!) Liam can't exactly stack the rings yet, but he loves to knock them down and carry the individual pieces around the house. I think he likes the clanking noise it makes on the ground while he's crawling...

We have ventured into the world of finger foods! Puffs, Lil Crunchies, Waffle Wheels...I love em' all! (Liam does too!) The waffle wheels are probably my favorite because they are bigger and last longer. If he's fussing, I'll hand him a Waffle Wheel and be good for at least 5-10 minutes while he plays with it, crawls around with it, and finally (maybe...) eats it! These say they're for a 'crawler' on the package, but I started giving them to Liam pry around 6.5 months when he was still learning to crawl. As with any food--don't feed to your baby unsupervised, and I make it a rule to never feed him snacks in the carseat since I wouldn't know if he was choking.

Ahhh yes. We teethed this month. Liam is actually working on tooth number four right now--four teeth in one month! Yeah, it was rough. I really think the Orajel helped.

I make Liam's food most of the time, but obviously if we're on the go, these are much more convenient.  Earth's Best, Plum Organics, and Happy Tot are my favorite in terms of ingredients. Liam doesn't really have a favorite--he'll eat anything. Still haven't found a food he doesn't like....

I mentioned Baby Food Making--This book really helped me get started. It goes into the basics of cooking/pureeing, lists the best foods by age, foods baby shouldn't eat, and has countless puree recipes. After awhile I just started experimenting on my own, but if you plan on making your own baby food, I'd definitely recommend a book!

Memorial Weekend + Meal Planning...Tuesday?


Happy Monday! Err...Tuesday! 
Long weekends always do that to me. 
Only 4 days this week--YAY!
Sorry I was a slacker on blogging last week...I seriously have a list of posts I'm dying to do. There's this little thing called 'time' that I always seem to run out of though...
In addition to that small glitch, I was stricken down with Mastitis last week. (Yes, I said stricken.) Of course, they couldn't squeeze me in for a same day appointment, and I wanted antibiotics right away, so I spent 7 hours at the ER. 
BUT! Thankfully that was worth it, the drugs kicked in quickly and I felt so much better w/in 12 hours. 
Anyway, since I've officially had every possible problem you can have with breastfeeding, (thrush, plugged ducts, milk blisters, blah blah blah) someday I'll do a blog post about them all. Someday! When someone gifts me some of that 'time' earlier spoken of.

So. In other news, how was your long weekend?!
Ours was fantastic! We spent some time on a boat, a few days at the beach, BBQ'd a couple times, shopped for baby gates, and just relaxed!
But now that the week has started again, it's back to our routine and back to cookin!
Here's what we're havin this week!



These are yummy and pretty quick. 
As far as baked sweet potatoes--my absolute FAVORITE side. So easy, so good for you.
I just bake it like a normal potato, but it usually takes longer. 

*Pre-heat oven to 400
*Wash potatoes
*Wrap in foil
*Stab several times 
*Bake for about an hour, or until fork tender
YUM!

I've raved about this before. Another FAVE! Yummy, delicious, good, nom nom. 
Lots of veggies, and of course, I use sweet potatoes instead of regular. 
Whip up some biscuits (And by whip up, I do mean....use the canned ones. CHEATER!)
And maybe a salad on the side. 

Yet another Pinterest find that has become a regular. By far my favorite 'stir-fry, chinese night' recipe. I always add fresh broccoli and serve over brown rice. 

I have not made these yet, but they look yummy!
Does anybody have any good side ideas for mexican night? I always have a hard time coming up with a veggie.... do refried beans count?

Another one that I haven't tried, but it looks awesome!!

Meal Planning Monday


Hap Hap Happy Monday! 
I hope your weekend was grand!
We spent all day Saturday at the beach with tans/burns for all, 
and all day Sunday doing some much needed house cleaning. Keith actually took it upon himself to detail my kitchen...and by detail, I mean he literally emptied every cabinet, cleaned, and reorganized them all. 
Liam is offically in fully crawly mode, so we needed to do some kitchen baby-proofing, including moving all our chemicals/cleaners to a high cabinet.
Anywho...With a super shiny, newly organized kitchen, I'm looking forward to cooking this week!
Here's what we're having:


Spaghetti:
I don't really do anything super special with my spaghetti. I use lean-ground beef and cook it with onions & green bell peppers. Usually throw in some salt, pepper, & lots of garlic.
Add our favorite pasta sauce (usually I get the Ragu that has a full serving of veggies) and serve with whole-grain spaghetti.

I've made just regular Chicken Tacos in the CrockPot and they're delicious, so I thought I'd give this recipe a whirl. 

My husband loves Ribs. LOVES. They can be kind of intimidating to make, but I feel like they're really hard to mess up in the CrockPot. They always come out super tender, and there isn't much work required at all! I've done them before, but this exact recipe is new to me.

If you're never had a Monte Cristo...You NEED to try one. I've only had them at restaurants, but I haven't had one in awhile. I found this recipe and can't keep myself from trying it. It's definitely not the healthiest meal...maybe we'll just have extra broccoli on the side...
This is from the Weight Watchers site (to make up for Monte Cristo night :) but you can't tell at all! I've made this chicken before & it's AWESOME. One of my top 3 baked chicken recipes.
